super sandwiches

One of my resolutions for the new year is to bring homemade lunches to work everyday. So when I stumbled upon this during my morning blog routine, you can imagine my excitement. Found here, they give you 30 super sandwich combinations. Here are my top three…

Goat Cheese & Honey

2 Tbsp goat cheese
1 whole-wheat English muffin, split and toasted
1/4 cup walnuts, halved and toasted
3 to 4 fresh basil leaves
2 tsp honey

Spread goat cheese on toasted muffin halves. Top each with walnuts and basil and drizzle with honey.

Turkey & Veggie

2 Tbsp hummus
2 slices whole-wheat bread 
2 oz sliced turkey
1/4 green bell pepper, thinly sliced
1 pickled cherry pepper, sliced
2 Tbsp thinly sliced red onion
1 Tbsp grated Parmesan
1/4 cup pea shoots

Spread hummus on two slices bread. Top one slice bread with turkey, peppers, onion, Parmesan, and pea shoots. Top with second slice.

Roasted Asparagus, Onions & Leeks

2 slices seven-grain bread, toasted
1 Tbsp extra-virgin olive oil 
2 Tbsp fresh ricotta
2 stalks Roasted Asparagus
2 rounds Roasted Red Onion
2 pieces Roasted Leeks

Drizzle oil on toast. Spread ricotta on one slice of toast. Top with roasted vegetables and second slice. 

Breakfast, lunch, & dinner made up of heavenly sandwiches. Yum!

    Yum – goat cheese and honey! We’ve just started using walnuts in a lot of dishes lately. I’ll have to try this.
